Salmon with veggies

There is something in the supermarket (ready prepared) similar to the dish we had today. But because I know that one has always a lot of fat and salt inside, I once imagined how to prepare it myself in a more healthy way. I need to admit, it tastes a little different, but in a good way.

For 1 grown-up and 2 children
Takes app. 30 minutes
3 pieces salmon
Lemon juice
8 oz frozen vegetables
5 oz cream
Salt & pepper

Wash the salmon, spread some lemon juice all over and salt it.
Place in an oven-safe pan.
Chop the veggies in a kitchen machine, add the cream, salt and pepper. It should have the consistency of ice cream. (This is by the way the fastest way to prepare ice cream by taking frozen fruit instead of the vegetables and chop it with cream).
Spread the veggie-cream-mix all over the salmon. Bake in the oven at 360 degree F for about 20 minutes.
To have kind of a crust on top, it may be nice to spread some breadcrumbs on top before baking.

I served it with rice and spelt, but can also imagine to have it with mashed potatoes.
