Tuna-tramezzini

I’m still trying to establish having fish for lunch once in a week. Today we had tuna and the kids didn’t complain. At least not about having fish. It was just a little bit too much mustard in the spread. Other than in the original recipe described I added some lettuce to fresh up the sandwich.

For 1 grown-up and 2 children
Takes app. 10 minutes
60 g tuna (in oil)
1 tbs mayonnaise
1 tsp lemon juice
1/2 tbs dijon mustard
Salt & pepper
4 eggs (hard-boiled)
8 slices bread
Iceberg lettuce

Blend the tuna, mayonnaise, lemon juice, mustard and some salt and pepper in a high bowl with an immersion blender.
Spread some of the tuna-mix on a slice of bread, cover with sliced egg and some lettuce. Cut the bread diagonally.
